Chicory

Cichorium Intybus

Chicory blooms from June through the first frost of the year.

​

Like it's cousin, the Dandelion, Chicory is naturalized in the United States, meaning it does not harm the local ecosystem to survive, and can actually benefit the growth of other plants!

​

Leaves, buds, and roots are all consumable.

​

The roots contain about as much caffeine as a cup of black tea and can be a great coffee alternative.

​

Buds can be pickled and flowers and young leaves are great additions to salads.  Mature leaves make good cooked greens.
